After I read your post and you mentioned wet aging, I had to look it up. Yoy say your people let that brisket age like that for 30 days. How long can you or should you go? I have had my briskets sit in the fridge for 4 weeks (yes it was between 32-36) and my wife would say I better cook that or it will go bad. So if it's sealed in its cryovac bag, how long is safe?

Did the BarbeQlossal last year with FE. It's a little different contest as you also have to cook a whole hog. I can handle the other categories, but I'm not wild about trying to create Candy's method of hog in a FE and don't want to have to trailer a Whole Hog cooker up there for that.

But it was a fun time, make sure you get a slot on the south side, the booths on the north are very hot that time of year.
