On the 4th of July it was just under 95, here. I set out to do a standing rib roast, a la Stuart.

Set that little Smokette at 225, but I got curious. Dropped a Polder probe down the stack, and waited.

In 15 minutes that little beast hit 264*. Pegged the needle. The max on the machine is 250.

The Smokette needs a temp gauge and a thermostat. And a baby sitter.

I also thought my 55 had an unusual heat cycle so I ran a test with just the probe and an empty unit. The results were

15 min - 155
30 min - 260
45 min - 312
60 min - 266
75 min - 242
90 min - 221
105 min - 206
120 min - 224

From this point forward it held between 212 and 240f. I suspect it has something to do with the cabinet shell reaching a certain temp ad then things settle down. The internal temp probe rests against the shell and possibly senses the cool shell until the shell actually reaches the 225f range consistently. Just my non expert opinion....
