Has anybody at Cookshack thought of putting a manual temp. probe in through the door?
Before I bought my 008, I had a hand me down smoker from my dad who bought it from the Sausage maker. This smoker had a thermometer through the door, it was cheap and reliable, and I could buy 10 of these for the price of 1 electronic thermometer. It was an easy way to tell the inside temp. My 008 is great Big Grin and I'm already looking into a bigger Cookshack model.

Don't forget if you put a hole in your smoker you lose the warrenty. On top of that, you open up the chance to get moisture indide the door insulation. Use a secondary probe through the hole if you have concerns of the inside temp.

One question would be why do you feel you need to know the inside temp while you are smoking? As smoking, you are going over hours and not minutes like a grill. It is a fact that there are temp swings as others have supported from 5 up to 20 degrees but over the cook you get your avg. temp to be what you dialed in.

I only check the internal if I feel there may be a couple cooks that took too long but after testing that recently, it was just fine.
