Hello All,

I was ready to pull the trigger on a Bradley smoker until watching The Food Network this evening. They did a piece on Cookshack. The Cookshack smokers seem to be exactly what I look for in a product...quality and US made.

Quick question. In all my research on the Bradley product I found the most common complaint was temperature swings. For this reason many folks replaced the electronics with a PID. Do the Cookshack products suffer the same temp swings or do they keep temperature?

the CS controls will at first overshoot the set temp to get the wood to smokin'. At that point they are fairly accurate at staying pretty close to the set point. Like any kitchen oven the temp will vary a bit around the set point as the electronics sense and adjusts. The average temp is maintained within a degree or two of the set point.
Saw that same show last night. I've got an SM020, mine is usually within a couple degrees up or down of the set temp. Just keep the door closed, no need to peek until you're nearing the end of your cook time when you start checking for doneness. Mine has never overshot the set temp, my wood is usually smoking well before the set temp.
