Hope you don't mind, I'm a traeger 075 owner not a CS but we have something in common ( the circut board)
I am haveing a impossible time reaching 220 degrees, I turn it on smoke and I hit 190 if I put it on 180 I spike to 250 and one click above 180 and I am nukeing at 300+, this is after Traeger's tech assistance. Is there a better thermomstat on the market. I only want to trust the numbers on the dial to read close to what my Maverick read's. Am I asking too much?

Temp swings are common in pellet cookers , they are a beast of them self. Temp setting are only a quide of what is going on . It used to worry me but now I concentrate on cooking and flavor and timings of when items are done and enjoy the products after words. Dont let it bother you .Practice ,Practice , Practice
