Our appliances are attached to the floor and the wall. But I would think the rubber things you can put under wheels on office chairs and such, little square things would hold the wheels in place. You'd probably need something on the wall to latch the appliance. You still have to clean all that stuff so just mount the appliances permanently and clean around the appliance and the attachments well. It's not that hard.

If you're looking for a hose down type wash, I don't think that's a good idea in a trailer anyway if you're thinking of it lasting awhile.
If you're wanting to do this professionally, since you are in the professional forum this is what I figure you're talking about, you might run into problems with your health inspections if the appliances aren't attached. I'd definitely look into that with your state, county, and city inspection bodies.

brad,
our fec100 and sm150 are mounted as follows (this also includes our 22 cu ft reefer and 7.2 cu ft freezer)
bend mild steel 90 degrees.
bore a hole that matches the wheel axles on one upright and bore another hole to accomodate a 3/8 lag screw on the floor leg.
meets our department of business and professional regulation requirements for mobile food dispensaries. and nothing has ever moved in over two years of towing.
like peg said this was done to meet a situation that is different from those encountered by competion cooks but it has worked well for us. in your case perhaps eyebolts and tiedowns used for motorcycles might be cheaper but if you pose the question up in the comp area i am sure they could give you some great help.

Temporary or Permanent?

Temporary solution is to by "D" track and mount it on the wall. I have my two FE's mounted that way then roll them out for use as needed. Can't use them easily while strapped down..the strap goes across the front.

Here's a photo. The two tracks going horizontal are "D" tracks. Some put the D tracks in the floor. I keep the floor free and they work great on the wall. I put 2 3" straps. One middle, one low. Lock the wheels and the FE's never move during transport.
