I am wanting to play with a tri tip option for a new restaurant but during discussions with the "big" food vendors, when I mention tri tip I get the deer in the headlights look. Granted I'm in SC, but given the popularity of the cut out west, I would have thought someone would know what I'm talking about vice having to google it. Is there another name for this cut of meat they might recognize?
