Just got my tube smoker and did a batch(about 4 pounds of cheese in my 025. Boy does that thing put out smoke. I filled half of the tube with foil and half with pellets. I had to relight it one time and I had to open the door a few times as the temp rose into the 90es. But the results were great. In about 2 hours the cheese was perfect. I vacuumed sealed the cheese and will refrigerate. Is there a better way to store the cheese? I usually give a lot away for Christmas. How long will it last in the fridge?
