I am putting the numbers and information together to do a start-up commercial operation smoking/jerky for Tuna, Marlin, and other fish. I would love to have some feedback from others with experience on this unit, or others. What type of luck they have had, problems to avoid, even a tip or two what to do and what components/accessaries I will need. I will package and sell this to the public. We are in the process of drawing and submiting operation specifications to meet all needed regulations and public safety requirements.

I would appreciate any info you would care to share.
