I have been cooking on my FEC 100 for over a year and just do it for family and friends. Just was asked to do a small wedding and have been asked to do larger groups as well. The wife wants me to buy a 500 on a trailer (lucky guy, huh) but would it give me more versatility to buy another FEC 100 and put both in a small trailer? I kid you not, she really wanted the enclosed trailer that Chaplin Bill (in the professional forum) posted about but I talked her out of that. My thought on the two FEC is they would let me cook more variety at different temps and times, (brisket and ribs for example). All of your help and ideas would be appreciated.

How much capacity do you need? A 2nd FEC100 gives you 200 lbs capacity at a cost of $4K.

Adding a FEC500 will increase your total to 600 lbs at a cost of $15K. How many events can you handle that require that much food? How long will it take to cover the return on investment? Do you have a storage facility that will handle the FEC500?

I like the idea of a 2nd FEC100. See how that works for a year or so. If you find yourself in need of more capacity you could even add a 3rd 100.
