Two Stage Cooking

I know this is somewhere, but cannot find definitive instructions on how to do a two stage cook on the FEC 120.
I know (or think I know) that you use the cook function at a lower temp and then the hold at a higher temp. But what are the steps (I.e., press this button, then this one, etc...). Sorry if this seems elementary but I cannot find a manual for the IQ4 controller any longer.

Set the temp you want to cook at, 180 for example, then set the time you want it to cook at that temp, 4 hours. Then set the hold temperature to the higher temp you want to finish the cook at. 275 for example. It will stay at that higher temp until you turn off the smoker.
