Actually, you don't have to have a sauce at all, unless you want it. I apply mustard to the raw butt and then rub and sometimes I inject with various liquid concoctions. When the butt is pulled, all that seasoning gets mixed in with the meat. The meat is always moist when done in the Cookshack 008 Smokette. Some folks like the sauce on their bun with the slaw and pork. I usually just like the slaw, cheap hotdog buns, and the pork. I might even take offense if someone puts sauce on my BBQ.
