I'm a long time smoker but new to electric and definitely looking to upgrade to a higher quality model than the cheap units I've used in the past. I'm struggling to understand how value changes as the prices seem to go up pretty dramatically between models. As far as I can tell, the only difference between the 025 and the 045 is capacity, but the price premium is pretty substantial just for the box to be a bit bigger. The 066 is obviously the flagship model, and it looks like you get capacity and auto shutoff/hold mode. Again, a $500 premium over the 045 seems steep for that.

Please can someone tell me if I understand the tradoffs correctly? I absolutely believe you get what you pay for, but it does seem to me that the steps up in price from the 025 to the 045 and then again to the 066 are pretty steep for the incremental features.

Any advice greatly appreciated.

I don't disagree that the price does jump as you move up, but like you said, you get what you pay for. I bought the Amerique 5 plus years ago, size is perfect for cooking alot of meat. I've had zero problems. Few months ago I visited the factory, met a bunch of the staff. It was like meeting family. Cookshack takes great pride in their product and a very high level of customer service. I could go on, but you get the point. Buy the biggest unit you can afford, you won't be sorry.
BTW, I just bought 2 SM260's for our restaurant. Never a doubt that Cookshack was the premier smoker, end of story.
I've owned two used Cookshacks. Got my first, an SM008 on eBay. Great unit but I wanted the additional and wider shelves. Having been quite happy with the SM008 I was not afraid to look for a larger used Cookshack. I found a used SM150 for $1400.00 on my local CraigsList. Had to drive an hour to pick it up. The Cookshack smokers are real tanks, and will last you most of your lifetime. Operating costs are nill, really one $22.00 of wood lasted me a LONG time.

Good luck on your search, you really should get the biggest one you can afford (even used).
