Hi I'm new to this forum, but I have a question for some of you out there. I have a small catering business, and soon I will be getting the oppertunity to be able to vend food at a festival. I was wondering if there was anyone out there that has done this type of thing, and how they determined how much food to prepare. I know the weather is a BIG factor, and I already called and found out how many people usually attend this event based on previous attendance. What I am wondering is has anyone come up with a rough percentage of business that they might expect from a crowd. I'm of the opionion that I would rather run out of food than have a lot left over, but I wouldn't want to run out early in the day. I already have rough estimate that I came up with, but I'm wondering how close my guess is compared to what other people have seen. I know this sounds like a story problem, but bear with me. I was told that roughly 10,000 people attend this event, and we can vend from 9am til 5pm. There is supposed to be 5 other food vendors. So in my rough estimate, I'm guessing maybe 1/3 of the people will eat there. So I took that number (3,333) and divided it by 6 (the number of vendors), and came up with 555. Does that seem somewhat reasonable, or am I way out of line? I realize this is if the weather is nice.
