Hello everyone!

I am new to the forum, and new to the BBQ restaurant business but not restaurants as whole. I am located in Lake Charles La and my restaurant was heavily affected by the recent hurricane, restaurant was doing great. I have been using this down time to re-event the restaurant, the main problem I was having is the kingfisher cooker is incredibly labor intensive, however, the product is great. Up all night every night it is hard to find someone dedicated enough to pursue perfection I am looking for a new smoker that will turn out the same product but less labor any suggestions.

what you might consider is what we did which was to get both an fec100 and sm150. i saw your holding post and the auto hold feature on the sm is great.
while it might not be a consideration in your location i know our inspector here really likes to see the NSF sticker and both models do have that. he also likes the auto hold feature a lot.
