I been using wood chips a mixture of hickory and apple on pork shoulders. Mostly in the 8 pound range. I been weighing it out to around 4.5 ounces of wood is this sound about right? I'm cooking on a older model 50 the meat turns out really good just wondering if that is normal amount or not? Cooking 1-2 shoulders at a time.

I'm going to chime in here with the standard forum answer: the correct amount of wood for YOU to use is determined by YOUR taste. There is no "normal" amount of wood. There may be an "average" amount of wood that CS users smoke with for a given food item, but not a "normal" amount.

Myself, I keep increasing the amount of wood I use for PBs. I think my last PB was 5.5oz and my next PB will be 6 oz. I like smokey PB...

If you're looking for a comparison, I'd say that's a little heavy. I see, when mentioned around 2 to 3 oz max.

But it matters more to your taste buds. That's what normal is. User defined Big Grin
