So true! I did put rosemay and a garlic bulb in the firebox and it smelled FANTASTIC. Next time I'm going to season the meat with Rosemary and garlic, then I'll put Rosemary and garlic in the firebox if I have guests and want to impress them!) But I did not get any hints of them on my final product...a two bone prime rib that came out so good. I cooked it at 225 for two hours and then 140 for three hours. I didn't quite get the medium I wanted so I put it back in at 200 for about 4 more hours and it came out just right (160 internal temp)oh and I did use 8 ounces of Hickory wood too.
That was my first thing done in the new smoker and I must say I was proud of that, everyone loved it and so did I.
