at present i'm (hot)smoking trout for market here in queensland, australia. i'm looking for another up market product(pork and chicken products are well covered here in oz) with a high margin to smoke. anyone out there have some ideas? as you can see i posted earlier a question regarding the smoking of mussels. they are one option. any ideas you blokes?
ps; venison is not a viable option here in oz.

I'd post this down under the pros only forum and see what the folks that vend offer.

You are in beef country,so pulled beef might be an option.

Check the search at the top for chuck roll and shoulder clod and that might get you started.

Western Ky,here in the States is known for smoked mutton.

Large marinated shrimp might be an option.

ABT s are popular,but labor intensive.

Hi Dundee,

Can I redeem myself by possibly suggesting smoked lobster for say salads? I like lobster for whatever reason!

I am not trying to be funny here, but I did read that they use kangaroo meat in Australia to make BBQ patties. I have no idea if that is a bad suggestion or not. Here exotic meats usually do well. Can you adapt any local favorites that might not usually be smoked to the smoker?
