other than wiping it out..anything to do to keep it from growing corn or getting all moldy or gross inside the cooker?

Generally speaking, no.
I change the foil on the bottom and on the wood box every time. And in the past year I've done a more serious cleaning maybe twice. This "serious" cleaning consists of a quick wipe down internally with a rag after running smoker w/o wood but with a pan of vinegar water for about 2 hours. This loosens heavy residue nicely, and anything that won't wipe off after this dosen't need to come off.
I use my smoker at least twice a week, and after a little more than a year it looks and works as new.
