Hi Everyone,

My Amerique is full Im using all four racks.

6 pork shoulders and 1 Brisket.

2 butts per rack and 1 brisket on the top rack.

I just saw that the capacity for heavy meats is 50 pounds.
I think that im about 15 pounds over that.
The meat is not touching the sides of the smoker.

The meat has been in for 2 and half hours and the smoker temperature is up to 197 now it's set for 225.

What will being over the weight limt do?

The "limit" is an average and it will depend on the size of the specific cuts.

Haven't done a full AQ smoke, but in the others, it took a little longer to get to temp because of the amount of meat, but after that, no change. Maybe a little more moisture.


You said shoulders, then you said butts. Are you doing both?

The built in probe in the brisket reads 185.
The temp of the smoker is reading 225.
Im guessing that the cook time will be about the same as last weekend cook times 2 butts and 1 brisket took 16 hours.

I woke up 5 am the drain pan was upto the top.
I emptyed the pan.

And opened the smoker to rotate the 2nd and 4th shelf.

6 butts and 1 brisket sorry I said butts then shoulders.

After this batch is done,
I will have to do one more batch.
It will be 3 briskets.

The Amerique has been great : )
