Just a tip I though I'd share. To see how things will fit, I like to load up my grilles with food inside in the kitchen and then place them into my Amerique smoker. To transport the loaded grilles without dripping all over the floor, I use some aluminum sheet pans I bought from AbleKitchen.com. I use the "3/4 size sheet pan" which measures 16" x 22" x 1" deep. (The two local commercial kitchen supply places said only half or full size sheet pans were available - nothing in-between.) A Half-size pan was too small, and full size was a bit overwhelming and difficult to wash & store. These pans also work great when bringing the food back into kitchen - just slide a whole grille's load onto the pan and away you go. Just a thought....
