Just got my AmeriQue two days ago and found some small problems with the finished product. Today I started the breaking in period, put the temp. at 200 deg.F and time at 5 hours everything looked OK did not pay much attention to the temp. Waited about 30 minutes went back out to see how everything was going and noticed that the unit said OFF by the temp. button turned unit off and then back on and started process over again this time I watched the unit and noticed that the temp. was going down instead of up I open the door and noticed the temp. went back up again I was wondering if this is what it should do. I was not in the probe cooking mode.

Thanks SmokinOkie for the reply curiosity got the best of me I took the back off and swaped the two wires coming from the temp. probe everything looks OK now but I will still call customer service Monday. Im alittle concerned about there qulitiy control being that I have spent alot of money and have found several things that should not have been missed if the unit had been checked out before it left the facility that being said the AmeriQue looks great and is holding the temp. real close I can't wait to get to smoking with it.P.S. I have been reading alot of your comments in this forum and the advise has very helpfull I appreciate you sharing your knowledge with use.
I had the same problem with my Amerique, but once I figured out they had swtiched the temp probe wires it has worked fine ever since. You were quick to figure out they switched the wires. I too, am concerned about the quality control, this issue and a couple other things resulted in multiple calls, mailings and tests to try to figure out the problem. When you spend that kind of money and have been reading the forum for months, you want to get going as soon as you get it. But it all worked out in the end and I have been happy with my Amerique.
I had similar problems with my AmeriQue, wires switched and one that was not attached, wrong sized bolts for the casters. The service department was good. However, I would have preferred to have everything working correctly the first time!! As I said before, the Forum Crew not only sold the AmeriQue ; but helped me to keep the unit rather than return the AmeriQue for a refund. The AmeriQue is a good, functional unit; the problems are in the Quality Control. The Forum Crew is GREAT!
