Just got my new Smokette last week and tried a single 2lb. rack of baby back ribs last night. My wife declared them to be better than any we have ever gotten at commercial joints. Now she wants me to cook a full load for all the relatives next weekend. My question is . . . I used a little over 2 ounce of apple for these ribs and the smoke level was perfect! If I cook about 10 lbs., should I increase the amount of wood proportionally or will the same amount as used before be sufficient? I would try it ahead of time, but I don't think I am up for eating 10 lbs. of "mistakes".

Good Question.

I wouldn't increase the amount of smoke except for maybe another oz. Try the full load with 3 oz (use apple or cherry if you can -- goes great with pork).

Then, take note if that was enough for you. If yes, then you're good, if not, add 1 oz more the next time.

Keep good logs and you'll know for yourself. The hardest part is to try to tell someone how much smoke is too much. One person will say it's over smoked and the next will say -- "what smoke?".
