I use my FEC all the time for Jerky.
Did 20.4# today followed by 4 # of bacon smoked with apple/cherry.

I use Eye of the Round (cost effective) sliced 1/4 inch. Marinaded overnight with Soy and a bunch of spices.
I coat with Emerils Essence for spicey flavor.

I smoke for 3 hours at 166 using a 50/50 Mesquite and Hickory mix.
Finish off in the dehydrator for about 4-6 hours till properly dry.
No reason you could not do the whole process in the FEC--just my way of doing it!
