I have hot smoked bacon several times in my FEC 100! I put 2 racks in the top slot and hang my bellies with bacon hangers which have hooks on the rack rods. The FEC 100 is large enough to handle full 12 lb bellies hanging vertically! I use the 7 setting in the IQ5 program which is for sausage, smoke 140 cook at 180 to minimum internal of 145 hold 140. I use apple wood pellets but you could use hickory or other fruit wood like maple.
