Hmmm, an idea! Anyone ever try using about a 9x9" pan with about 1/4 inch apple juice or an apple juice/vinegar mix with their smoke? I am talking butts here. I am sure it would probably boil away in not too long. I realize it would add moisture. What about flavor? Anyone?

I have never used juice with butts, but I often use a small jar of apple juice in the smoker when I do my ribs, and it does add to the flavor as well as the moisture. I sometimes use grape juice or cranberry juice instead of apple, and these both give a pretty interesting flavor as well. Most of the CS models don't have a very high maximum temperature, so if you use a 1/2 inch of juice in the jar rather than 1/4 inch, it shouldn't boil away completely unless you have a very long cook time. The juice does get very thick after a while though, so I would use a small glass jar that you don't mind throwing away afterwards as it can be hard to clean. Just my $0.02.
