Bought 4 fresh small (all about 3# each)chickens and had them quartered. Rubbed them with a small amount of EVOO and coated them fairly heavy with my rub. Put 8 quarters each on the top 2 shelves of my AmeriQue and set the temp for 235* for 3 hrs. 30 min. The last 15 min. turned up the temp to 250*. I used 2 oz. of hickory and 2 oz. of apple. The chicken came out perfect, moist, and very tasteful. Everyone said it was the best. Love that AmeriQue
