Bones per rack?

Ok just trying to get a concensus. At retail how many bones off a rack of SL or BB do you use?Just trying to see what the average was.
I mix and match small and large ones in a 4 bone basket. Also do you cut/trim any off when selling a 1/2 or full rack?

I market my BB racks as approx 12 bones, even though most of the racks I purchase have approx 14-15 bones. I'll leave all the bones if the rack is smaller than average.

We sell by the full and half, no trimming, unless I cater a party and they request less or more bones.
