ok bill here goes, sorry the quantity is so large.

bishop's bread - 3 stage method

1.25 lbs ap flour
1.75 pounds light brown sugar
2 tsp baking soda
2 c raisins, dark
2 c pecan, chopped
2 tsp cinnamon, ground
1 tsp salt, plain

mix with paddle attachment, low speed, until well blended

8 oz butter, non salted, chilled, chopped

add to the above and mix until mixture appears crumbly

2 c buttermilk
6 oz eggs, whole, beaten

add to the above and mix just until blended. DO NOT OVER MIX.
portion into four OILED 9 x 5 x 3 loaf pans.
bake at 350f approximately 35 mins.
done when tester comes out clean.

if you need a yeast type bread recipe let me know.

would advise for pellets either 100% oak or an oak/pecan blend

what the heck you hit my one soft spot.
to be honest if i was never again allowed to cook bbq i would just happily do bread.

this is a yeast type bread and again i appologize the recipe is for 4 loafs.

whole wheat sunflower bread - single throw method

2 c rolled oats
4 1/2 c buttermilk
4 eggs, whole
6 c whole wheat flour
6 c bread flour or high gluten
4 Tbs wheat germ
2 Tbs salt, plain
6 Tbs butter, non-salted
8 Tbs light brown sugar
6 ea. oranges, grated, rind only
1 1/3 c sunflower seeds
1 tsp baking soda
1 oz. yeast

proof yeast in 100f buttermilk
add the balance of ingredients. using a dough hook beat until this leaves a clean bowl.
continue beating 10 more mins.
put in an oiled mixing bowl and let rise until doubled.
punch down and scale into four 9 x 5 x 3 loaf pans.
let raise until doubled
bake at 350f 35-40 mins
to test take one loaf out and tap it. it should sound hollow

ps. by the way both of these freeze very well. just let cool, wrap in commercial film and then wrap in heavy gauge aluminum foil
