Hello,

I am cooking a brisket for thanksgiving this year and am a little concerned about cooking time. I have a 16 pounder and seems that 1.5 hours/lb would be too long to cook it (being almost 24 hours of cook time). Should I plan for this kind of time and wrap in a cooler if it is done? Trying not to upset the in laws on the holidays with a late dinner!!! Any help would be appreciated.

A 16lb. brisket is pretty large. I would figure on 1.5-2hrs/lb. at 225ºF cook temp. Use a remote temperature probe placed in the thickest part of the flat. Resist the temptation to open the door as that will only add to your cook time. Calculate your start time from when when you plan to serve dinner. Subtract 24 hours and a couple hours for a cushion. If it is ready early, double wrap in foil with a half cup of black coffee and a half cup of low sodium beef broth. Wrap an old towel around it and place in a small dry cooler. It'll stay hot for about 6 hours. If you're pressed for time, you could wrap in foil and finish in the house oven at 350ºF until the internal temp reaches 190ºF or so.
