I did my first ribs on a Smokette this weekend. I had two slabs of spears and one pack of country style. The country style were done in about 1 1/2 hours, and when I tasted them they were BAD I had put enough spicy rub on them to set the world on fire. I realized that I had done the same thing to the spares, so Took them out of the smoker, and washed most of the rub off of them. On just about any other machine that would have made a mess of things, not the CS put them back on and misted them with a little apple juice. they came out great. Raised the total cook time to about 7 1/2 hours, is all.
