This would require a decent investment and I don't know exactly how you transport your cooker but I'm rigging my trailer up with a Xantrex charger/inverter and a couple of deep cycle batteries to provide power for competitions. There's no reason you can't cook on the go like that either though. Depending on other factors of course.
It might be too late, but I'd cook the butts ahead of time, refrigerate (or freeze, depending on how far ahead you cook them), then reheat them onsite. Don't partially cook, it's not food safe with the danger zone, etc. I have a Xantrex RS2000 and two Optima yellow top batteries mounted in my trailer and it works well. If you have an FE100, I don't think I'd cook on the go, the shelves could collapse then you'd have a potential fire hazard, and you'd definitely have a mess on your hands.
Thanks for the help, I went with 21 slabs of ribs and 15 chickens,,, didn't have time for the butts. Later that night(cooking for comptetition) I had major problems with my fec 100, fire overloads, low temp, high temp,, must have a probe or thermostat problem. I hope Tony or Eddy can help me soon
The original set up was about 10k, then I took off a five foot by 2 ft grill on the rear of the unit, and put the fec 100 and a weber in it's place,,, just needed more space for smoking and less grill.I could send you a drawing of how it lays out and I'll go take some better pictures to post,, but basically, two turkey burners on the front tongue, three draw rotating offset, with a warmer oven necked off the firebox, kegerator, dry box for storage of generator/ inverter, marine battery and xm radio and amp, 4 halogen lights, speakers, wood crib back-up lights and now a fec 100, just added a bottle opener on side, also built into the light poles are electric outlets for additional things like coffe pot or electric knife,
