first thoughts (pictures to follow later today)

1. after an hour with temps between 80 and 90 I tore off a piece of mozarella... I don't think mesquite and cheese mix.

2. the edges of some of the cheese- especially the mozarella- are drying out. maybe I'm still too hot?

so I was all excited to get rolling with the cheese and I forgot to swap out the pellets. I'm not sure I'm going to like mesquite cheese. Fortunately everything at sam's is sold double so I can try the other of each with mesquite when these are done.

I've got mild and sharp cheddar, mozarella, pepper jack, and colby jack cheeses going.

I'll probably pull the moz. after 1.5 hours since it's already got a heavy flavor. I'll let the others go about 3 hours.
