I am smoking spares for Christmas Eve...it's just the wife and I and we're gonna eat ribs until we bust!

Bacon Wrapped Shrimp, Grilled Halibut, Grilled/roasted Brussel sprouts, pan seared green beans All done on either FEC100 or Fe PG1000.

7.3 lb. Prime grade Standing Rib Roast! Looking forward to this one. Going to make some boursin potatoes, glazed carrots, cucumbers and onions in sour cream, and some homemade dinner rolls. Yum!

I just purchased my first prime rib tonight, but I'll wait to give it a try. Smokin' has always said not to try something new for a special day.
I did talk to Ma and ask her if she enjoyed prime rib, she'll be coming up sometime next week...what are Moms for anyway? LOL!

Mesquite smoked deviled eggs for a potluck with some of our church family Christmas eve and a smoked beef tenderloin for our family on Christmas day
Doing 5 racks of pork for Christmas eve. Two for another family and 3 for us. For Christmas day 2 ten pound "prime" prime ribs, bone on. The ribs are for me and the dog next week. I go first then the dog gets the bones, at least that's supposed to be the right order. Merry Christmas to all and and a "smoking" New Year.

Sounds like a plan but your dog shouldn't get cooked bones, they tend to splinter, raw bones only, but, I know many people that do give their pets cooked bones and have never had a problem.
Prime Rib, 21#, aged for 50 days. Looks great. Prepping this morning, we'll have it for dinner tonight.
8 pork butts, 5 brisket flats, 2 turkey breasts and a partridge in a pear tree.

Christmas Eve 11# Prime Rib...58 days age according to purveyor. Marbling looks almost USDA Prime but Brandt Beef always does.
Just seasoned with Worcestershire, Fleur de Sel and fresh ground Penzy black peppercorns. It hits the AQ at noon via Smokin's 4 stage PR101 unrevised cooking method.
