After searching the forums for cold smoking it seems that the process is available, however can be somewhat complicated by using a cold smoke plate, ice, turning the unit on for 20 and off for whatever. So I have been thinking about this for at least a year and now that I have 60#'s of fresh Alaska salmon in the freezer, what would happen if you simply rigged up a light dimmer (large enough to handle the current) and plugged the CS into it? Using a temp probe, one could turn down the voltage on the CS such that the heating element would only put out a proportional amount of heat, say 600 watts instead of 1200. The switch on the top is simply a heavy duty thermostat switch and will always stay on if set higher than the desired temperature. There is nothing that needs a full 120VAC and there is no chance of damaging the heating element.

Anyone ever try this?

Nope, never have tried that but I have done a bit of cold smoking. You didn't mention what you were trying to do with the salmon but I assume you're trying for lox... not cooked salmon for pate or plain eating.

I have done a lot of cheese by using the cold plate and a pan of ice. Let my 008 (now have a 055 that I haven't tried cold yet) go for 25 mins or 100 degrees on top, whichever came first. Then I turn it off and just let it sit for a couple of hours. Cheese gets really smokey with this but with fresh salmon, you'd have to worry about food safety. But I think you'd get enough smoke out of what I described.
It only takes a couple of smoke cycles to get all the smoke you need for salmon. That is like 4 hours in a smokette. Whether that is dry enough is a different thing. I use a separate dehydrator to control that. For cold smoking you want to keep the temperature under 90 degrees total. But you need a heat source to get the wood chips to smoke. That is why you turn the Cookshack on and off. I have been working on one or two charcoal briquettes in a small clay flower pot, but I am still working on getting the most smoke with the least heat. Once I get something I like I will post the results. Wink
