couple of questions

1. Why are my racks for my Model 55 all turning copper??

2. When i do leg quarters, i only seem to be able to get 4 to a shelf. (that's 20 pieces per load.) Some people on here get more than that in a smokette. Do i not have to lay them flat? Can i just stuff them in vertical and leaning against each other?

3. Why is it every other time i start my smoker my neigbors in my Apt complex call the fire dept.. It was funny the first time but now they are getting mad.. seriously, they were talking about fining me.

4. I'm pretty poor right now.. could i just tinfoil a shelf real thick like 5 or 10 times around and put a big pyrex tray with ice on it and cold smoke that way until i can budget in a baffle? Or won't it work that way?

5. Has anyone ever made smoked salt? If so about how long should i put it in for?

Hi Andy,

I can't answer all your questions, but I saw nobody had responded so I wanted to let you know somebody was listening.

As far as the racks I believe it's a matter of the "chrome" coming off the rack. How are you cleaning them?

As far as your apartment is concerned, you are smoking outdoors aren't you? Maybe you could let your neighbors know when you're doing a smoke.

As far as cold smoking I don't believe your process would work. The baffle is an inch thick with insulation sandwiched in the middle.

Do a couple searches on cold smoking & smoked salt. You should be able to find information on each.

I see you have been a member for a long time....where have you been friend??

Dr. Mac is correct about the racks. I think it's just one of those things that you will have to replace from time to time.

Leg quarters.....I would not just shove them in there. It's okay for them to be slghtly touching but they must have room for the smoke to get to them. Maybe if you dis-joint them, you could maxamize your space.

As far as your apartment, maybe you should invite the complainers to have a good Q meal with you.

If you still get complaints, I would find some new friendly Q neighbors....and if all else fails I could probably find room for a 55. Big Grin

Regarding the chrome coming off.. I had that question, mentioned here in the forum and created a bit of discussion.. however, I called Customer Support and they said it is not chrome.. it is another plating. Maybe chrome would not come off.

I don't know why they don't make the racks out of stainless as are the Smokin Tex.. but they don't.

That said.. I'm letting mine go. When I look at my son's Lang.. heck.. that thing is UGLY by comparison. Get's scraped and brushed.. but never washed as I do my CS racks.. I guess the bottom line is.. Don't let it worry you.

Regarding smoke.. Doc has the right idea.. invite them over for some good Q.. Besides.. they can't fine you... but they can cause you some headache..
