started smoker at 6 am brsket on at 630, set at 224 we'll see what happens!!!!

Check for tenderness around the 185 o mark. Use an instant read thermometer, a toothpick or something similar...inserted top to bottom in the middle. When the resistance is minimal, it's done. Foil and hold for at least 30 minutes to let the juices settle.

16 hours later and done at 190, let rest and put in refridgerator, reheated before the race and had to run my kids away from it absolutely unreal cooking ribs today then another brisket tonite
