for the second time I've had the 2 firepots in the 500 fill while cooking. I noticed a lot of smoke from the stack and looked in the firebox. Both pots were full of smoldering pellets and the ramps had charred pellets stacking up on them. The pots were full of these pellets and ash.

So I finished these briskets in the oven and completely cleaned the firebox.

take 2: after cooking some ribs at 270 I dropped the temp to 172 to try a 24 hour cook on briskets. About 6 hours in to it I again thought there was too much smoke. And again the firepots were full.

rather than waste this cook, I scooped out the firepots with a metal spoon until they seemed clean and then restarted the cycle. As of this moment there is fire in the hole, but it sure SOUNDS like it's a little muffled compared to the sound you usually get when the convection fans are going.

Looked in the control box and both convection fans are blowing. I'm using a combination of pellet manufacturers- both reputable and neither has ever been a problem.

so if I follow you correctly, the fans on the firepots stop during the fill cycle. so there are already hot pellets in there and then 3 minutes worth more before the fans start back up? effectively clogging the air holes too much for when the fans start back up. is this right?

okay, so what are the recommended methods for switching cycles on a hot pit? one that comes to mind is to simply extend the existing one by changing the temp manually and extending the time. what's the best way if you don't have the time or inclination to let the residual pellets burn off and the pit cool down before continuing to cook?
