Thanks to all that gave suggestions on how to cook my pork butt. I took 2nd place in Pork at the Cascade Country Cook Off in Chehalis, Wa. this weekend. I started with a bone in butt. Injected about 4 hours before putting it on the smoker. Smoked for a few hours then bumped up the temperature. I placed large chunks around the outside of the box and pulled pork mixed with a Carolina Vinegar sauce in the center. I will try to post a picture. Hope it works. Thanks to all especially SmokinOkie. I also took a little time to mentor a newbie at his first competition this weekend. He took 7th place in Pork. Boy was he excited. I felt pretty good about it myself.
