I would like to thank joe b for all of his help. This is the second round at my attempt to create a summer sausage with my own recipe (creation).

Although I am very happy with my final product, I still think it could be better.

I think I might be grinding the meat too much or maybe the third pass through the grinder (to stuff the sausage) might be making the meat more like a paste.

The final product doesn't seem mushy to taste; however, it looks like a much smoother consistency than that of the product I purchase from a pro.

Sorry guys, It was late and I had to get to bed. This weekend is going to be hectic with the superbowl cooking. I will try and update the photos with detail later tonight.

If the texture is pleasing to you then your on the right track, are you using a grinder plate or a stuffing plate on the stuffing stage? What method of smoking are you using. Not asking for your recipe but what ingredients are you using? Them green specks japs?
