I am opening a bbq place in Sydney,Nova Scotia Canada and own the CS model 250. This concept will be new to our area so we've been developing a style that we think will appeal to local palates. That said, while the reno is still getting sorted out we thought we'd plan a weekend trip to a barbeque hot spot to hit as many great places as possible and see how much we can absorb. I'm interested in presentation, decor, set up, and of course flavor! Ideally we'd find at least one place where a CS smoker is being used.
Our thinking is on going to Memphis, but we are open to suggestions.
Reason for Memphis - numerous well reviewed places in one city and a great Blues scene. (we plan to incorporate a Blues atmosphere)
Question - If you had one weekend to go anywhere in the southern US and sample as much great Que as possible where would that be? Ideally, where I could meet some folks using CS style smokers as well. We plan to go the first weekend in May(6-8)if possible.
