Was planning to smoke a pork butt, but all I could find on Friday nite was a two-fer pack of boneless pork shoulders. It had some bits hanging loose so I tied it up.(good thing cause the one bit I missed overcooked/dry). Around 11 hrs @ 225. No peeking. Tender/juicy and perfect for pulling. Minimal waste. Bark was excellent. No regrets. Almost perfect on the first try. I'll have to find the best spots for placing wood in the woodbox. 1 piece burned perfect and the other charred a little and was left intact. Smoke flavor in meat was OK for first time, so no disappointment.
Gonna go back to lurking.... If I can just pull off ribs this easy I'll consider myself very lucky. Hats off to Cookshack for building a great smoker.
