My first time smoking chicken thighs this past Sunday. I rubbed them with Plow Boys Yardbird rub, and put them on the SM025 over 1 ounce of cherry wood. After an hour at 250, I sauced them in half Blues Hog and half Blues Hog Tennessee Red. I then placed them in the oven at 350 for 15 minutes.
I thought they came out pretty good. The meat was tender, and the skin was almost perfect. Next time, I plan on leaving them in the oven for a few minutes longer to get the skin just right!
