Interesting. How do you know it is 325?

You could possibly have a fried traeger probe or it could be the controller. My digital readout is not accurate at all. You may want to consider buying a new digital controller, mine came also with a probe. I plan on replacing my old one in a couple of weeks since I think it got fried in a major grease fire last summer.

I keep track of my inside temps with a smokehouse quality high temp probe by thermapen with their digital readout. Tells me the exact inside temp. I then use a couple more to keep track of the internal temps on the meat.

This is one of the reasons I always include a probe attached to a remote unit in my FEC. No smoker is infallible. I set the ET-73 with a high and low temp range for the smoker and it will wake me if it goes outside of that range. I figure, why take chances. Especially when I have a load of twelve butts on there. IMO
