I'm new at sausage making/smoking.
Tried a nice breakfast sausage- looked great after stuffing- nice and even- no air bubbles that I noticed. When I went to fry it- several of the sausages got large pouches of meat that popped up in the casing (made my sausage look pregnant)
like the third link from the bottom in the photo.
Didn't effect the flavor-they were delicious, but it doesn't do anything for my "presentation".
any thoughts on what I might have done, or what I could change?
