Press and hold UP+DOWN for 5 seconds, display says “LHt”. This is the “Low Heat Time”. This is the ON time when the temperature is above set point. Release UP+DOWN to edit the value.

To set the temp, just turn it on and use the up/down arrows for your desired temp. As has been said, the others are for fine tuning. I have my LHT set at 10 and leave it there. The lower the HHT is, the less temp swings you'll get so for low temps I run it down to 20 or 30. If you are grilling, setting the HHT higher will get it up to the desired temp faster.
