I have a Cookshack Amerique smoker and my question is if for instance I was going to smoke my jerky with mesquite or hickory why would I use the mesquite or hickory hi mountain spice also. Their site dipicts their jerky maker just going inside a regular oven. Is their mix just overkill for a smoker?

Should I just use their original mix. TIA

Mike -- I think I understand your question and concern. Go ahead and smoke with whatever wood you desire. I imagine the folks at HM add a touch of artificial flavor to the mix. I have only used the "Original" blend from HM and smoked with hickory. Everything has turned out well, better than I expected.
