I'm looking at opening a few barbeque joints in Germany to serve the military community in 2006 or 2007. My selection for pre-made sauces consists of 1/2 gallon containers of Kraft. Does anyone have good recipes for BBQ sauces to be made in large batches? I would like several styles to include Kansas City, Carolina, and Tennessee. All my cookbooks are for small quantities.

i sure wish i had recipes for more than a gallon at a time but those recipes i do have i just did the math and expanded them.
the only areas i found that cause a little trouble when you do that is;
1- salt. start with 1/2 of what your expanded recipe says and work up from there.
2- rate of evaporation. in my experience it always seems to take around 50% longer than my small batch time.
another idea you might want to think about is to look at what cattlemens has to offer and then doctor it up with your own seasonings

Tom and PC are right! Just do the math and convert. It really isn't hard to do. Just be sure and write it down because trying to do the math everytime you make it sucks.

Thanks for the great responses I got from Chef Tom, prisonchef313, ZebzBBQ and dmerrell. I plan on taking their advice and making the recipes in larger batches and watch the salt content. My wife is a great cook and I know from her that you cannot always double or triple the recipe and get the same results. The proof will be in the final product. Once again, thanks!
