the fec100 standard has 4 racks. Talked to Eddie and he said they can add slot for up to 7 racks. anyone done this? and are you happy with that?

For my competition smokers I've got with the 7 racks.
MAIN reason is flexibility. I can adjust the racks to various heights to put what I want in there.
If I'm doing ribs, I use the FE Rib racks, each one holds 10.

Like Smokin' says ,flexibilty is a use.
When you try to use too many,you may have air/heat flow problems,temp probe blockage,etc.

A few other reasons I like seven racks. With seven racks, the spacing works out so a foil pan will fit on each rack. This is handy when holding food in the cooker and when cooking large quanities of beans. As Tom says you have to be careful about air flow. I heavily loaded all seven shelves with thighs and it took forever to get done since it cook from the bottom up. Not sure that the same thing won't have happen if I had loaded four shelves that heavily. With proper spacing, I can cook more chicken on seven than you can on four. I would never order an FE without seven racks.
I'm not sure why but the 7 shelf option is now 6. Maybe to keep the 7th shelf away from the temp probe as that position is the missing 7th shelf. I'm happy with 6 both on my new FEC-100 and the upgrade I purchased for my old one.
