A few other reasons I like seven racks. With seven racks, the spacing works out so a foil pan will fit on each rack. This is handy when holding food in the cooker and when cooking large quanities of beans. As Tom says you have to be careful about air flow. I heavily loaded all seven shelves with thighs and it took forever to get done since it cook from the bottom up. Not sure that the same thing won't have happen if I had loaded four shelves that heavily. With proper spacing, I can cook more chicken on seven than you can on four. I would never order an FE without seven racks.
