We primarily are a BBQ team, but have been getting requests for some private catering. We’ve been asked to cater a golf tournament for 180 people. I have no idea how much to make and was looking for some advice. They are requesting
Beef Brisket (I’ll make whole packers)
Pulled Chicken (I’ll make whole chickens)
Mac & Cheese,
Beans
Slaw
And they are dead set on having Mashed Potatoes.
Just wondering if anyone could give some suggestions on how much to make. Any help is appreciated, Thanks.

Well for starters, is this being served as a "grab n go" on the course? A casual lunch? Dinner buffet?

Generally speaking, figure about half @ pound of meat per person. Briskets will yield about 50%+, chickens a tad more. For a sit down lunch/dinner I'd guess you'd need about 200 lbs of raw brisket, which will yield about 100 lbs. Chickens...about 1/4 bird per person or 45.

For your sides, figure about 4 oz. each.

Assuming this was a main meal event, yes. I was figuring about 4-5 oz of smoked brisket + 1/4 chicken (pulled) per person. Thus, 45 lbs of cooked brisket would be needed. Given the 50% loss factor, you'd need to start with 90 lbs. I rounded up a bit to be safe.

Max I was figuring around 95 pounds of raw brisket, but in you're original post it says 200 pounds, was that a typo?

I agree the thighs would be a better idea as well. and we could just shred the thighs. Thanks Tom.

It is a main meal event from 6-9PM after the tournament.
